I activate Mindslaver targeting my opponent. During the turn I control, do I get to look at all of his face down creatures?

I'm guessing that if you get to see their hand, you probably get to see other hidden cards (i.e., face down cards).

The Oracle wording:

Sacrifice Mindslaver: You control target player's next turn. (You see all cards that player could see and make all decisions for the player. He or she doesn't lose life because of mana burn.)

So to answer your question...yeah.

Yeah, and hope you see a Zombie Cutthroat to unmorph...

The sentence in parenthesis is reminder text, which doesn't directly tell you the answer.

The actual rules for controlling a turn are a page long (507 (http://magiccards.info/rule/507/)).

507.2 is what's applicable:

507.2 If information about an object would be visible to the player whose turn is controlled, it's visible to both that player and the controller of the turn.
