No, that doesn't work. If the Nether Spirit isn't in your graveyard at the beginning of your upkeep, it won't add a trigger to the stack. That is because of the "interventing 'if' clause":

I don't think that's an errata for Kiki but all older effects reading "Sacrifice it at end of turn" now trigger at the beginning of the end step. Or am I incorrect with that?
Of course you can. The original card text was just added to make clear that you can block with a creature and even if you sacrifice the blocking creature afterwards, the creature it blocked still...
