If I steal a goyf that is a 5/6 with Vedalken Shackles and have 5 islands. Then an enchantment hits the yard making him a 6/7 do I loose the goyf?

No. The ability that gave you control over the Goyf had the target restriction "target creature with power less than or equal to the number of Islands you control". This is checked only twice: when you play the spell right after you chose targets (to make sure it's a legal one in the first place) and when the spell would resolve (to make sure it's still a legal one). After the ability resolves this restriction becomes irrelevant. If it ought to be otherwise, the ability had to mention it explicitly (like "as long as Vedalken Shackles remains tapped and that creatures power is less than or equal to the number of Islands you control").

Its always nice to use a Serendib Sorcerer along with shackles to steal a DSC in multiplayer :)

Ok another question about shackles:
If I steal a manland will they gain control of it at end of turn or is it just like goyf where i keep it forever?
also if I steal a creature that is already attacking does that remove it from combat?

You will keep the land forever.
"12/1/2004 The creature's power and the number of Islands you control matter only when the ability is played and resolved. After that, only the fact that Vedalken Shackles remains tapped matters. You maintain control even if it stops being a creature."

Yes. Control-change removes a creature from combat.

Yes but the Creauture is still tapped. In some situations it doesn't matter but against decks such as goblins and even threshold you want to steal a creature to block that turn, so you want to steal it at the end of mainphase.
Forever? Even if the Shackles leave the play?
No once shackles leaves play, the land goes back to its owners control.
Since this is talking about shackles I have a question that my local tourny was discussing, what happens with you take a goyf with shackles that used to be yours but was also stolen from shackles, and then untap your shackles, will it stay on your side becuase of ownership or will it go back to your opponant becuase of his shackles. EX:
I play a goyf.
opponant steals gofy.(with shackles ofcourse)
I steal goyf back(with shackles of course)
I untap shackles...... what happens.

Since this is talking about shackles I have a question that my local tourny was discussing, what happens with you take a goyf with shackles that used to be yours but was also stolen from shackles, and then untap your shackles, will it stay on your side becuase of ownership or will it go back to your opponant becuase of his shackles. EX:
I play a goyf.
opponant steals gofy.(with shackles ofcourse)
I steal goyf back(with shackles of course)
I untap shackles...... what happens.
Your Goyf goes back to the opponent, assuming he did not untap his shackles.

If i steal a creature with shackles on my own turn do I have to wait a turn before i can attack with it?

A creature can't use it's tap abilities or attack if it wasn't in play since the beginning of your last turn (if it's your turn, then last turn is this). So, if you take control, you can't attack right away unless it has haste. It has "summoning sickness".

Along with this but slightly different, what if I steal the opponent's creature during my turn with Shackles. After my Shackles resolves, he uses Shackles to steal his own creature back. On his turn, will he need to keep Shackles tapped to keep the creature? Because at a tournament I played in, the judge ruled he could untap the Shackles and keep the creature even though my Shackles was still tapped. (I think part of the confusion was also it was a Mishra's Factory and I'm pretty sure the judge also thought that because it was not a creature anymore, the Shackles was not an issue...)

I Tsunami'd Deep6er this weekend, assuming I would get back my Goyf (and beat him to death with it) at the $1k Legacy Tournament in Syracuse, only to have to Swords the same Goyf several turns later before it beat me to death.

As long as your VShackles remains tapped, your control effect will still apply, so if his ends, yours will be the most recent one and cause you to gain control of the creature.

The control effect of Shackles ends immediately when Shackles leaves play or becomes untapped.

Immediately. And I do mean "immediately". For example, if the following card existed:
Smash to Peach Garden Oath 1W
Instant
Destroy target artifact. You gain 2 life for each creature you control.
you would gain two life from the Tarmogoyf that returns under your control as soon as Shackles are destroyed.
