I know Doran gains 7 life but does he trample for 7 or 2? Is trample the assigned damage or the power of the creature?

A creature assignes damage with its power. Trample just changes, what it can assign its damage to. Nothing else. So, when a card changes with what damage is assigned (like Doran does), Trample doesn't really care. It still just changes where this damage can be assigned to.

502.9a Trample is a static ability that modifies the rules for assigning an attacking creature's combat damage. A creature with trample has no special abilities when blocking or dealing noncombat damage. (See rule 310, "Combat Damage Step.")
