I attack with a 1/1 creature it goes unblocked and I decide to ninjitsu my ninja of the deep hours. My opponent stifles it. What happens? Is this even possible?

It has a colon, so it's an activated ability that can be Stifled. What happens is that the cost was already paid (you bounced an attacker and paid 1U) but the effect doesn't happen (the Ninja doesn't come into play and stays in hand instead).

Hm.... do you still have to reveal the Ninja? I would imagine you do (just like you have to reveal a bounced Morph dude), however, with the placement of the colon, if there isn't a specific section of the comp-rules that spells out you have to reveal it first (before it comes into play tapped and attacking), then your opponent basically would have to guess whether or not they want to Stifle before you put the creature into play (I realize this isn't that relevant as there aren't a whole lot of Ninjas, but imagine there were another Ninja with 1:u: as the Ninjutsu cost.....).

the comp rules say (sorry, too lazy to pull the quote, but i read it ealier today) that ninjitsu means
cost, reveal ninja card, take unblocked creature into hand: put ninja into play attacking.

Hm.... do you still have to reveal the Ninja?

Here the complete rules for Ninjutsu, emphasis mine:

502.43. Ninjutsu
502.43a Ninjutsu is an activated ability that functions only while the card with ninjutsu is in a
player’s hand. “Ninjutsu [cost]” means “[Cost], Reveal this card from your hand, Return an
unblocked creature you control to its owner’s hand: Put this card into play from your hand
tapped and attacking.”
502.43b The card with ninjutsu remains revealed from the time the ability is announced until the
ability leaves the stack.
502.43c A ninjutsu ability may be played only while a creature in play is unblocked (see rule
309.2f). The creature with ninjutsu is put into play unblocked. It will be attacking the same
player or planeswalker as the creature that was returned to its owner’s hand.

As you can see, revealing the card is a cost of the ability. As always when revealing one or multiple cards, the card stays revealed until the ability leaves the stack.

The Ninjutsu cant trigger from a hidden zone, ie your hand. That's why you have to reveal it.

Ninjutsu can't trigger, because it's not a triggered ability, but an activated one ;)
