Greetings, I have a question about this card. The other day while I was playing with a friend, I tapped my Gaea's Cradle, and in response he tapped his warrior and turned my cradle in a island. My question is: did my land produce the normal green mana (and amount) or did it produce just a blue mana? I'm not a expert, and I thought lands mana abilities were faster than anything else.
Thanks for the answer.

There's no "faster than". Things either use the stack or they don't.

Mana abilities don't use the stack, so they can't be responded to. A mana ability is any activated ability that adds mana to your mana pool.

So yes, you get the mana. You tap Gaea's Cradle, and get all of the mana, without giving your opponent something he can respond to. Your opponent can make the Cradle an Island next time he gets priority, but it will be far too late.

Additional question: If the mana ability has a target, it uses the stack, right?

here you get the mana and the trigger of witchengine goes on the stack afterwards. You still can't respond to mana you gain, only to the trigger which occurs afterwards.

No. Rule 406.1 says, that an activated ability without a target that could generate mana is a mana ability. Witch Engine's ability has a target, so it isn't a mana ability. There's nothing in the rules that says a mana-generating ability that has a target could be broken into a mana ability and a non-mana ability part.

Also, Witch Engine's ability isn't a mana ability plus a triggered ability, which would trigger from playing the mana ability.

That's what I thought, thanks for the answer! Just the last question: if my opponent has the priority and he turns my cradle in a island, can I get my green mana before the land becomes a island?

You can tap it in response, yes. This is why smart opponents will usually do effects like Tidal Warrior in your upkeep (you probably don't have anything to do with the mana in your upkeep).

Ok thanks, all clear now.
