So if I put Fool's Demise on my opponents Homura, what happens when Homura dies? Does it come into play under my control as a creature, or into play under my opponents control as an enchantment, or something else?

That depends on whose turn it is. Both cards have a triggered ability that triggers when the creature is put into a graveyard. Since they aren't controlled by the same player these triggers will go onto the stack in APNAP (active player, non-active player) order.

So what'll happen during YOUR turn is the following: The Homura goes to a graveyard, and both abilities trigger. Since it's your turn, the Fool's Demise is put onto the stack first, then your opponent's Homura. Since Homura's triggered ability is on the top of the stack it will resolve first and back into play as an enchantment. After that the Fool's Demise resolves but isn't able to find the Homura and so does nothing.

If it's your opponent's turn, the triggers go onto the stack visa-versa, so the Fool's demise would resolve first, giving you Homura. After that happens Homura's trigger resolves and can't find Homura and does nothing.
