1. Can I stifle flashback? what happens If I do? Is the card still removed from the game without any effects? It seems to me the 'removing' effect is the part of the ability. So does Stifle counter it anyway?
2. What happens if I Stifle dredge?

You can do neither.
Stifle can target
a) Triggered abilities
b) Activates abilities.
502.22a Flashback appears on some instants and sorceries. It represents two static abilities: one functions while the card is in a player’s graveyard and the other functions while the card is on the stack.
502.47. Dredge
502.47a Dredge is a static ability that functions only while the card with dredge is in a player’s graveyard.

Ok, I've always kinda thought that 'If you would draw a card...' is a triggered ability.
But what about the flashback card? Does it still get removed?

You cannot stifle either.
Dredge is a replacement effect, not a activated or triggered ability. It doesn't even go on the stack.
Flashback is casting the spell, just like normal only it's cast from your graveyard. However if you Remand a flashbacked spell it still gets removed from the game.
Bonus: 'If you would draw a card...'. statements that include "Instead" are replacement effects. Statements that begin with "When" or "Whenever" or "At" (ex: At the beggining of your upkeep) are triggered abbilities. Triggered abilities are extra things that happen when some event occurs. Replacement effects are something that happens instead of some effect occuring (the replacement effect itself does not use the stack, but if the ability it is replacing used the stack then the new function does the same).

Exactly. "As" is not a trigger.
Trigger, Triggered Ability: A triggered ability begins with the word "when," "whenever," or "at." Whenever the trigger event occurs, the ability goes on top of the stack the next time a player would receive priority and stays there until it's countered, it resolves, or it otherwise leaves the stack. See rule 404, "Triggered Abilities."
410.10e. Some permanents have text that reads "[This permanent] comes into play with . . . ," "As [this permanent] comes into play . . . ," "[This permanent] comes into play as . . . ," or "[This permanent] comes into play tapped." Such text is a static ability-not a triggered ability-whose effect occurs as part of the event that puts the permanent into play.

Hehe, now when you ask it - I just wanna learn, why the Pithing Needle and Meddling Mage (and Dreamstalker?) cip ability cannot be Stifled. Is it just because of that phrase "AS XY comes..."? And does it mean that the effect is not triggered but a part of resolution? Or what? And how can I diagnose other such cards?

If something says "As ~this~ comes into play..." or "~this~ comes into play with..." then it's a continuous ability. Ergo, by the time the permanent comes into play, the ability begins applying immediately.This is usually done out of neccessity for the card to work properaly, such as the Modular ability, or to prevent Meddling Mage from dying to the card that you name, or so that Clone will further copy any "come-into-play" abilities of its target.
