So if theres an instant, sorcery, land and creature in the yards, is goyf a 4/5 flier or a 3/1 flier?

Layers.

Goyf's P/T setting is a CDA (characteristic-defining ability). CDA are always applied first within a layer, so P/T CDAs are 6a. "Other" P/T effects like Mimeomancer's are 6b.

So Goyf is always a 3/1, regardless of timestamps.

Small stupid question. If aven mimeomancer dies do the creatures with feathers stay 3/1s or is that just his static ability? I'm assuming the latter since the new firebeast specifically says that the lands keep burning.

It remains a 3/1 flying. Mimeomancer is really a good (and fun) card that needs to be exploited.

The creature being 3/1 is part of the effect that puts the counter on the creature (not an ability of the Mimeomancer), and the duration of the effect is tied to the counter being on the creature (not anything having to do with the Mimeomancer).
