Okay, I'm a little confused.
At the beginning of each player's upkeep, destroy target nonartifact creature that player controls of his or her choice. It can't be regenerated.
I'm the controller of the trigger; it's my Abyss. But my opponent chooses the target.
If my opponent controls a Troll Ascetic, can they choose it, or is does it's Shroud apply?
[My instinct says 'Shroud applies, it's my trigger / effect', but I want to be sure.]

Your opponent chooses the target, but you still control the triggered ability, so the Troll can be targeted.
To be clear:
200.7a. The controller of an activated ability is the player who played the ability. The controller of a triggered ability is the player who controlled the ability's source when it triggered, unless it's a delayed triggered ability. The controller of a delayed triggered ability is the player who controlled the spell or ability that created it.
If you control The Abyss, your Troll can be targeted by your Abyss, and your opponent's Troll cannot. It's irrelevant who chooses the target.

Just to make sure about this, for The Abyss, each player picks which creature of theirs that they want to have destroyed on their turn, right? That is, it's kind of like "at the beginning of each player's upkeep, that player sacrifices a creature"? The obvious difference is that the wording uses targets instead.

Not really. Since it targets you can go ahead and sacrifice the targeted creature to something else (eg Smokestack) with the Abyss trigger on the stack and have it fizzle that turn as a result, for an example.
