If I cast Pox with Nath of the Gilt Leaf under my control, will Nath's discard related token generating ability give me creature tokens before I have to choose creatures to sacrifice to Pox?

Nath of the Gilt Leaf has a triggered ability that will not go on the stack until Pox has finished resolving. So no, you cannot sacrifice the Nath tokens created by Pox's discard to Pox.
