How would protection work in these case.
We have a creatures protection from all colors.
Would we be able to :
1)Control it via Nicol Bolas, Planeswalker
2)Control it via gilded drake
3) Destroy it with Necrotic Sliver

All the cards mentioned are colored and need targets, so they can't do anything. Remember that protection from X means:
- It can't be targeted, enchanted, equipped or fortified by objects with X
- If it's a creature, it can't be blocked by creatures with X
- All damage that would be dealt to it by sources with X is prevented

1) No to all three, and all for the same reason. These abilities all require choosing a target, and none of the cards are colorless. You can't select as a target something that has protection from the color or colors of the permanent that triggered the ability requiring choosing a target.
Protection from a color does the following:
Prevents auras of that color
Prevents targetting from spells and abilities of that color
Prevents being blocked by creatures of that color
Prevents all damage from a source of that color
