My opponent has Iona on his side of the field with white as the named color. I casted Isochron Scepter and it resolves. I imprinted Swords to Plowshares on the Scepter. I have enough mana to activate the Scepter.

Can I still play Swords to Plowshares off of Scepter (since it was activated from Scepter) or would Iona prevent this action as well?

The Scepter states

{2}, {T}: You may copy the exiled card. If you do, you may cast the copy without paying its mana cost.

Since you would be casting the StP, Iona would prevent you from doing so.

Iona, Shield of Emeria
Isochron Scepter

Com.Rules:
111.1a A copy of a spell is also a spell, even if it has no card associated with it.

Unless Meddling Mage, which only prevents actual cards from being cast, Iona also prevents copies from being cast.

Iona, Shield of Emeria
Isochron Scepter

Unless Meddling Mage, which only prevents actual cards from being cast, Iona also prevents copies from being cast.

So, if I had an Isochron Scepter imprinting Swords to Plowshares in play, and my opponent has a Meddling Mage naming STP, I can hit his Meddling Mage with the Sword *copies* from the Scepter because they're copies, not actual cards?

Since a copy is not a card, you can cast a copy of the named card. That question is answered on the Gatherer page for Meddling Mage - that's not a bad place to check first.
