Vesuva and Valakut

If I scapeshift for 6 mountains, Vesuva and Valakut - bringing vesuva in as valakut- will it trigger?

You can't search for Vesuva and Valakut, and then copy that Valakut with that Vesuva. Vesuva's replacement effect applies just before the lands enter the battlefield, so you must copy something that's already on the battlefield (probably nothing, if you sacrificed everything to Scapeshift).

If your opponent has a Valakut to copy, or you have one in play already, then yes, the Vesuvlakut would trigger - it enters the battlefield as a copy.
