Is it possible for the Manaplasm to grow before being sac'd to the Momentous Fall - i.e., draw 5 instead of 1?

No. The ability is triggered, and so it won't resolve until long after Manaplasm has left play.

Manaplasm 2G
Creature -- Ooze
Whenever you cast a spell, Manaplasm gets +X/+X until end of turn, where X is that spell's converted mana cost.
1/1

Momentous Fall 2GG
Instant
As an additional cost to cast Momentous Fall, sacrifice a creature.
You draw cards equal to the sacrificed creature's power, then you gain life equal to its toughness.

For emphasis:

116.8. Some spells and abilities have additional costs. An additional cost is a cost listed in a spell’s rules text, or applied to a spell or ability from another effect, that its controller must pay at the same time that player pays the spell’s mana cost or the ability’s activation cost. A cost is an additional cost only if it’s phrased using the word “additional.”

No. The ability is triggered, and so it won't resolve until long after Manaplasm has left play.

To avoid some confusion:

Momentous Fall has the sacrifice as part of the cost, which is why you have to sac the Manaplasm before Momentous Fall immediately, before the trigger on Mana Plasm can resolve.

Normally, Mana Plasm would get the +x/+x before a spell resolves. E.g. if you cast Earthquake, no matter what X is, Mana Plasm will live.
