Let's say I activated Chandra Ablaze's ultimate ability. Then discarded my hand and drew new cards, can I now cast cards that I had just discarded? Looking at Chandra I don't see why not, but I feel like that's the wrong answer.

You're wrong. As Chandra's ability resolves, you choose which cards you cast, and they are put on the stack right then. Chandra doesn't create a continuous effect that lasts for the turn.

If an ability allows you to cast a card and does not mention a period of time (usually "until end of turn"), you are just allowed to cast the cards right now, during the resolution of the effect. You may not cast the card any other moement.
