Ok, so my opponent has a bitterblossom out and a contamination with a bunch of land, and no faeries in play, I had a couple of lands, a top, and a jitte with 3 counters on it. He goes to his upkeep and makes a token, then sacks his token, I said, in response I will remove a counter to kill a token. This would ultimately force him to sac the contamination right? My thinking is that because it is a triggered ability and the saccing is not a cost, I can do this, and since he would target the faerie but when it resolved it would not be there and he would have to sac it correct?
EDIT: well, after reading the card again, it doesn't even target, so If I kill the faerie while the trigger is on the stack, when it resolves his only choice would be to sac the contamination. So I guess I answered my own question, Can someone just confirm it pls

Yeah, you can shoot the token before he can sacrifice it to the contamination.

If he does not pass priority before resolving the triggered abilities, you can force him to back up to when the triggered abilites are still on the stack. He can't just blow through things. He has to give you a chance to respond to them. You would have to let the bitterblossom resolve then use the jitte before the contamination trigger resolves. If he passed priority, and you let him sac the creature that is technically resolution of the triggered ability and you can longer respond at that point and actually do not have the opportunity to use your jitte.
Basically if he does not communicate the priority passing on the triggers then you can kill the one he targets, but he would get to choose another target, legaly. In a big tourney, he would get a warning for not passing priority if the scenario happened. If he does pass and you say ok, go ahead with it, once he chooses a target, its a done deal.
I think, someone correct me if I am wrong, or let me know if I am right :-)

OP - your edit is correct, Contamination does not target. Contamination's controller simply chooses to sacrifice a creature or sacrifice Contamination on the resolution of Contamination's upkeep trigger. If Contamination's controller has no creatures in play on resolution of the trigger he must sacrifice it being unable to choose the other option.
