Does Infect stack? That is to say, if I give a creature with Infect another instance of Infect, will give more poison counters than normal?

No. Infect modifies how a creature's damage is applied.

Er, they "stack" if they're triggered abilities. They "don't stack" if they're static abilities or replacement effects. Learn the difference, not some list.
