I know you can Stifle 'enters the battlefield' effects on creature but will removal such as Swords to Plowshares stop it (if you play the removal before the trigger)?

"Enters the Battlefield" abilities trigger immediately, so there is no time to play removal before the trigger is put on the stack. After it is put on the stack you can stifle the ability, but killing the creature does not remove the ability from the stack.

Additional notes:
You can only stifle etB abilities that start with "WHEN ... enters the battlefield ..." (triggered abilities)
You can not stifle abilities that start with "AS ... enters the battlefield ... " (static abilities)

To remove the creature will not stop its triggered ability from resolving.

This is why you can not stifle Meddling Mage and why you can't Swords to Plowshares Meddling Mage in response to naming Swords to Plowshares.

You can remove the creature with the trigger on the stack, but unless the trigger is directly affected by the creature when it resolves it will still go at it as normal (eg you can remove Spellstutter Sprite with its trigger on the in order to reduce the number of fairies in play).
