Day of the dragons will exile all creatures I control and replace them with 5/5 red dragons with flying.

when the enchantment leaves battlefield the creatures return from exile.

1. Are they tapped, untapped or they will retain this specific from the time when the left the battlefield?
2. Do they have summoning sickness?

1. Untapped.
2. Yes (unless something else gives them haste).

When objects change zones they are new objects - they have no relation to their previous existence (unless otherwise specified).

Phasing is the only exception, but nobody plays with phasing anymore.

502.15m A permanent that phases in can attack and tap to play abilities as though it has haste.
(This applies even if that permanent phased out and phased back in the turn it came into
play.) The permanent remains able to attack and tap to play abilities until it changes
controllers or leaves play.

Phasing is the only exception, but nobody plays with phasing anymore.

Permanents with phasing don't change zones (under current rules, anyway), so it's not an exception.

Phased In, Phased Out
A status a permanent may have. Phased-in is the default status. Phased-out permanents are treated as though they do not exist. See rule 110.6 and rule 702.23, “Phasing.” (“Phased-out” was a zone in older versions of the rules.)

Phasing
A keyword ability that causes a permanent to sometimes be treated as though it does not exist. See rule 702.23, “Phasing.”

702.23d The phasing event doesn’t actually cause a permanent to change zones or control, even though it’s treated as though it’s not on the battlefield and not under its controller’s control while it’s phased out. Zone-change triggers don’t trigger when a permanent phases in or out. Counters remain on a permanent while it’s phased out. Effects that check a phased-in permanent’s history won’t treat the phasing event as having caused the permanent to leave or enter the battlefield or its controller’s control.
