I was just wondering, but if I have a Mage Slayer equipped to a Phyrexian Hydra, would my opponent end up taking 7 poison counters even if blocked?

Of course. Read the cards.

702.87b. Damage dealt to a player by a source with infect doesn't cause that player to lose life. Rather, it causes the player to get that many poison counters.

Artifact -- Equipment
Whenever equipped creature attacks, it deals damage equal to its power to defending player.

Phyrexian Hydra 3GG
Creature -- Hydra
Infect
If damage would be dealt to Phyrexian Hydra, prevent that damage. Put a -1/-1 counter on Phyrexian Hydra for each 1 damage prevented this way.
