If I sacrifice a Murderous Redcap to a Jinxed Idol, which ability resolves first, the idol switching controllers or the persist returning the Redcap? Do I get to choose the order or is it defined by the abilities of the cards? I'm wondering if I can go infinite with a Persist creature, Melira and Idol.

You activate Jixed Idol and the ability goes on the stack, with the redcap trigger being placed on top of it when someone receives priority. As for whether or not the prevention of -1/-1 counters stops persist from working altogether or not, I do not know.
EDIT: From a similar Salvation thread: Persist will return the creature to the battlefield with a -1/-1 counter on it. Since Melira states that creatures you control can't have -1/-1 counters placed on them, and an object that enters the battlefield with a counter is considered to have that counter placed on it, the game will do as much as it can. The creature will be returned to the battlefield with no counter on it.
121.5. If a spell or ability refers to a counter being "placed" on a permanent, it means putting a counter on that permanent while it's on the battlefield, or that permanent entering the battlefield with a counter on it.
So yes, it seems to work as you would want. Congrats
