Wirewood Symbiote and Eladamri, Lord of Leaves

So I have a Wirewood Symbiote and Eladamri, Lord of Leaves in play with some other elves.

Can I bounce Eladamri with the symbiote ability and untap one of my elves?

No, you can't. You choose the target for the ability before you pay the cost, so at that point the elf still has shroud and is an illegal target.

Do I need two separate targets? Can I just target Eladamri with both sides of the ability to bounce him?

Since there is no target in the cost part, can I bounce one of my other elves to untap Eladamri even though the other elf would have shroud?

You can return any Elf you control to untap Eladamri, yes. Returning any elf to your hand is part of the cost and doesn't target.

You can also chose to return Eladamri to your hand while targeting Eladamri himself. After you returned him to hand as part of Symbiote's avtivated abilitiy's cost, Symbiote's ability will be countered because of no legal target.
