We decide that the Test of Endurance will still trigger but fail to win me the game. So in response to the trigger I cast Unmake on his Platinum Angel and win?

Yes; Test of Endurance will trigger if you have 50+ life regardless of anything else, and you will win the game when it resolves since Platinum Angel is no longer on the battlefield. If Platinum Angel was still on the battlefield, ToE's trigger would just do nothing when it resolved.
