Can I kill my opponent, who has two progenitus in their library, by using painter's servant, grindstone, and pyschogenic probe? Or will the game draw before the probe triggers resolve?

The game will be a draw, as Grindstone will never finish resolving.

That said, your opponent will stand to take about a billion x4 damage, if the loop were ever to be broken.
