If I play a Hideaway land (eg Mosswort Bridge)while I have either a Future Sight or Oracle of Mul Daya in play, do my opponents get to see whether I choose to hideaway the revealed card on top or one of the three hidden ones?

They could follow the card if they are very good, but I do not see any rule in the comp rules that states you have to tell them if you choose to hideaway a revealed card. Is there a more specific situation this came up in?

no, they don´t. When you´re looking at the top X cards of your library, those cards still remain on the top of your library during this process. Therefore your opponents will not see what card you´re actually exiling and you only reveal the top card right after the hideaway triggers is finished resolving.

They get to know what the top card is at all times, but if it moves they don't get to know where it moves unless you let them. If you don't want them to know, it's perfectly legal to shuffle the hideaway cards while looking at them before making a choice.
