I'm aware that if a person casts Show and Tell and you play a Phyrexian Metamorph, you can't copy the creature that your opponent cheats in.
My question is, is this the same in regards to Exhume?
If the opponent casts Exhume and plays a creature and you play Metamorph from your graveyard, can you copy it?

first of all, you donīt actually play or cast those creatures. They are just put onto the battlefield with the effects.
You can not chose to copy the creature your opponent is putting on the battlefield for the same reason that does not work with Show and Tell. The ability of Phyrexian Metamorph (or any other Clone-like creature) is a replacement effect which changes how the creature enters the battlefield. Therefore, it is applied just before it hits the battlefield and must chose a creature which already is there. Since both creatures enter the battlefield at the same time, your opponents creature is not there at the time it is relevant. Therefore you can not chose to copy it...
