Let's say my opponent has a 1/1 creature and he casts angelic destiny on it. Can I cast lightning bolt and kill his creature in response to him casting the angelic destiny enchantment? If so, does angelic destiny just go to the graveyard along with his creature?

Yes, when any creature enchantment is cast, it goes onto the Stack. Then, the active player has priority to play any effects. Then, the non-active player(s) gain priority to play any effects they have. Finally, when all players pass priority, the creature enchantment resolves, and enters the battlefield attached to the targeted creature.

If during those steps the creature becomes an invalid target (either leaving the battlefield, or gaining Shroud), then the creature enchantment spell is countered and gets put into the graveyard without entering play.

If you somehow remove (kill, bounce etc.) the creature Angelic Destiny targets before it resolves, Angelic Destiny will be countered on resolution due to no legal target. It will be put into the graveyard.
