How many cards should you really sideboard after each game?
I mean in your sideboard, there are maybe 8-9 cards that CAN be used against certain decks. for example
you play rock they have tempo.
you can board in 3 chokes, 3 extra removals, and some extirpates.
should you really board 9 cards in that matchup or stick with the 6?

Why the hell would you bring in Extirpate?
More importantly why would you play Rock?
But seriously here is my general process:
1. Consider how many cards you want to take out: For example cards like StP are useless vs High Tide combo.
2. How many cards are pretty clear upgrades: Path over Swords is a clear upgrade vs Affinity and most Tempo lists (No basics)
3. What are they bringing in? Many storm combo decks will bring in Bob's, factor that into your boarding plans (Definitely keep in Burn, some swords or dark blasts wouldn't be out of the question).
4. Think of how the game will play out. For example why do you want to bring in Extirpate? Is it really going to give you an advantage? What will both players being doing each turn for the first few turns of the game?
Vs tempo decks 3's are generally not the easiest to resolve (they have Dazes, stifles and wastes) so I'm not in love with Choke. Also they can use dazes to untap Islands. Extirpate is pretty aweful, I feel its generally worse than Surgical in the format, but not thrilled with either vs Tempo. Sure you can live the dream and cut them off a color, or with multiple drawn nuke all their creatures, but thats a bit greedy/unrealistic. As they are basically planning to 1 for 1 you Bob is huge for you, and KotR, if you can stick him, is pretty real threat (especially if you can get him out there without a forest to protect yourself from submerge.) if you can kill their early threats a resolved Knight (to dig up all your wastes) or a loam (to do basically the same) will generally finish them. Against the most common decks its important to have a plan.

Ok bad example. What about this then.
against aggro loam. You have 5 pieces of gy hate. Then you want to bring those in, but you also need additional space for removal. So how would you board against that?
