When does deathtouch take affect? Is it after combat damage has been dealt?

For example
I play a vampire nighthawk (a 2/3 with deathtouch, lifelink, and flying) I also have a grave pact (when one of my creatures is sent to the graveyard each other player sacrifices a creature) on the field. If someone swings at me with a 6/6 and I block with my vampire nighthawk can they sacrifice (from grave pact) that creature before deathtouch takes affect?

This might be a silly question but I really don't know exactly how it works.

How deathtouch basically works is any amount of damage dealt by a creature with deathtouch is considered lethal damage
If it helps you can think that whenever a creature with deathtouch deals damage to another creature it's 99999 damage instead of the normal amount (although not for Phyrexian Negator and such, of course)

So when you're getting attacked by the 6/6 and you block with vampire nighthawk, both creatures deal lethal damage to each other and die simultaenously.
Then your grave pact trigger goes on the stack, and they will sacrifice a creature (they can't sacrifice the 6/6, because it's already dead)
