You're gaining life in two instances. So two cards I'd say :)

2 cards. Combat damage is not assigned damage point by damage point.

If the intent of the card was for you to gain (by default) 6 cards, it would be worded "Whenever you gain life, draw that many cards."

Card draw is broken up into single events - "draw X cards" is actually "draw a card" X times. That's the only thing treated specially, though - a creature with lifelink dealing 3 damage twice is just two events.
