Yes. The delayed triggered ability is in no way contingent on the token being any specific permanent type.

Although Jitte was an awfully poor example. Considering that it's legendary, Phyrexian Metamorph would go to the graveyard along with the original Jitte after state-based effects check the "legend rule."
