If I wanted to drop a fatty into play with Sneak Attack during my opponent's end step (for whatever reason), would it survive into my turn?
My understanding is that it is already too late for the "at the beginning of the next end step" trigger to be put on the stack. However, I vaguely recall in some situations, if you put something on the stack in the end step, triggers can be checked again (someone please clarify if possible)?
What if my fatty is a Jin-Gitaxias? Can I Mind Twist my opponent, attack during my turn, and then stack the triggers at my end step to still draw 7?

The 'triggers are checked again' thing is to do with things that trigger during the cleanup step. This doesn't really have anything to do with the question you're asking. (eg if while you're discarding due to having too many cards you discard obsessive search and then cast it for its madness cost, when it resolves you'll have too many cards in hand again and there will be another cleanup step so you'll have to discard again.)
If you activate sneak attack during the end step of the turn, then the 'beginning of the end step' for that turn has already occurred, so the creature will be sacrificed at the beginning of the end step of the next turn.
Yes, you can activate sneak attack in the opponents end step to put a jin-gitaxias into play. The next step is the cleanup step where your opponent will discard their hand due to having 0 maximum hand size. In your endstep on the following turn, both sneak attack's trigger and Jin Gitaxias' trigger will trigger simultaneously, so you still get to draw 7 no matter what order you stack them - it just depends if you want Jin Gitaxias to be in play when you draw 7 cards or not.

Your opponent can, of course, remove Jin-Gitaxias and avoid discarding if they have instant removal.
