I probably know the answer to this, but i just want to be 100%. So if you use his first ability and "fight" with another creature that has power 3 or greater, he would not flip and die right?

That is correct. He is dealt damage, putting him to 0 counters, and while I believe the trigger still occurs to flip him, he either dies immediately or flips and dies immediately.

The long and short of it is that you need to hit something that has a power of 2 or less.

Here are the rules regarding this question:

306.9. If a planeswalker’s loyalty is 0, it’s put into its owner’s graveyard. (This is a state-based action. See rule 704.)
704. State-Based Actions
704.1. State-based actions are game actions that happen automatically whenever certain conditions (listed below) are met. State-based actions don’t use the stack.

In this case, the planeswalker will die when it reaches zero loyalty counters. The transformation ability of Garruk uses the stack, but state-based actions do not and always are checked first.
