In the event an opponent kills my Gideon Jura with a Mimic Vat out while Gideon Jura is a creature, first off, what the hell goes on there?
If he goes on the Mimic Vat since he dies as a creature (much like man-lands dying), can he use his + and - abilities? Can he turn him into a creature?
If he +2's Gideon Jura, at the end of the turn GJ goes away, does his effect fizzle because he dies EOT or is the opponent just forced to attack anyways?

Mimic Vat only "cares" that whatever is triggering it is a creature when it dies. There's nothing about "creature card" on Mimic Vat, just "card".
If he goes on the Mimic Vat since he dies as a creature (much like man-lands dying), can he use his + and - abilities? Can he turn him into a creature?
When you activate Mimic Vat, it makes a token copy of the card - copies are basically the card as printed. Token copies can be of any card type, not just creatures. It's a planeswalker with six loyalty counters, etc, etc.

The opponent would be forced to attack the Gideon Jura token, but since the token is no longer on the battlefield the attack requirement doesn't do anything.

One more question about this as this came up today as well:
If I turn Gideon into a creature and then drop Silverblade Paladin soul binding it to gideon and giving him double strike, at end of turn, what happens here?
Does this function sort of like +1/+1 counters and lands, or does it function more similarly to Inkmoth Nexus and Tezzeret, where it turns back into a land and has to be re-turned into a 5/5?
I'm assuming it functions like Tezzeret, however I'm also not sure if it's just a sort of property, like giving a planeswalker Indestructible or something?
I don't lose control of the thing Silverblade Paladin is bonded to, Gideon Jura is still there, he's just not a creature anymore.
702.93e. A paired creature becomes unpaired if any of the following occur: another player gains control of it or the creature it's paired with; it or the creature it's paired with stops being a creature; or it or the creature it's paired with leaves the battlefield.
Soulbond refers to creatures; once either half stops being a creature, the pairing ends.

Does the haste that Mimic Vat supplies allow Gideon Jura token to attack right away? Or does the haste get removed because it is not a creature when it enters the battlefield?

Any permanent can have haste. Yes, the haste allows you to animate the Gideon token and attack.
