So lets say Reveillark leaves play.

Could I then take two X/X or X/X+1 creatures, from my graveyard, like a Tarmagoyf for example?
What about something potentially massive like Golgari Grave-Troll?

Tarmogoyf - no.
Golgari Grave-troll - yes.

Tarmogoyf's P/T setting ability is a Characteristic-defining ability which works in all zones. If it would be a 5/6 in play, it's also a 5/6 in the graveyard.
Golgari GT is printed as a 0/0, with a "enters the battefield" ability that grows him.
