If I cast Unearth targeting Eternal Witness, can I then return Unearth to my hand? It resolves, hits the graveyard, she enters play, it feels like it should be a valid target I just want to be sure (BREWWWINNNNN!).

Yes.

When Unearth finishes to resolve, the last step is to put it into the graveyard. Then, once players gain priority, they will put any triggers onto the stack that would have occurred during the resolution of the spell. In this case, EWitness triggered upon entering the battlefield. Since now Unearth is in the graveyard, it is a legal target for Witness.

Yes, but it's slightly different from what you said.

As Unearth is resolving, it will return Eternal Witness from the graveyard to play (the game then makes a note that there's a triggered ability that needs to go on the stack), then as the last step in the resolution of the Unearth, it will go to the graveyard.

When you get priority back, the game then puts the Eternal Witness triggered ability on the stack, which can target the Unearth since it will be in the graveyard at this time.
