I'm fairly certain I know how this works I just want to confirm it. If Countryside Crusher had no counters on him and I were to cast Devastating Dreams at X = 3, the Crusher would die correct? Despite the lands hitting the yard, the 3 damage is dealt prior to his triggers resolving?

You are right. Crusher's triggers cannot start resolving before Devastating Dreams finish resolving.

However since discarding cards at random is part of the cost if you discard any lands when casting the Devastating Dreams, the Crusher trigger will go on the stack above the Dreams and put counters on the Crushers allowing it to live through your spell.

...But Knight of the Reliquary would, or wouldn't? Assuming X=3 and there's no lands in the bin yet before Dreams.

Knight would survice since his pumping isn't triggered as Crushers is. Game will see him as a 2/2 with 0 damage on him before Dreams, afterwards as a 5/5 (assuming no lands discarded) with 3 dmg on him next time state base effects are checked.

Didn't L0cke just counter this statement? Thus crusher would live?

Only if enough (if any) lands are discarded for casting Dreams.
Discarded (which is an additional cost) will trigger Crusher, thus resolving first and helping him survive.
However any lands DESTROYED by Dreams go to the graveyard the very moment Crusher gets damage and thus he'd die before the triggers would resolve.
