Since Metamorph doesn't target, it can copy True-Name Nemesis, but does it also copy the "As True-Name Nemesis enters the battlefield" ability?

I would imagine so, since when Metamorph comes into play it copies True-Name Nemesis, then a True-Name Nemesis enters the battlefield under your control, then copies the ability. But I could be wrong.

Yes it does. Clone effects copy the card prior to entering the battlefield, and pick up any "As <it> enters the battlefield". These are replacement effects that occur as the card/copy is about to become a permanent.

Specifically, section 706 deals with copying objects:

706.2. When copying an object, the copy acquires the copiable values of the original object's characteristics and, for an object on the stack, choices made when casting or activating it (mode, targets, the value of X, whether it was kicked, how it will affect multiple targets, and so on). The "copiable values" are the values derived from the text printed on the object (that text being name, mana cost, color indicator, card type, subtype, supertype, rules text, power, toughness, and/or loyalty), as modified by other copy effects, by "as . . . enters the battlefield" and "as . . . is turned face up" abilities that set characteristics, and by abilities that caused the object to be face down. Other effects (including type-changing and text-changing effects), status, and counters are not copied.

If phantasmal image copies true-name nemesis, it will have protection from one player, so sources that they control can't target it. The other player can still have things that target the phantasmal image, which would trigger the sacrifice.
