Say I have an Empyrial Archangel in play. My opponent attacks me with 100 1/1 tokens. My understanding is that combat damage happens as "1-thing" on the stack, so even though there's 100 different damage sources, it all gets redirected to the angel. She would die of course, but then I would take no combat damage. Is this indeed the case?

That is correct. The only scenario I can think of, where the outcome would be different, involves enough first strike damage to kill the angel.

510.2. Second, all combat damage that's been assigned is dealt simultaneously. This turn-based action doesn't use the stack. No player has the chance to cast spells or activate abilities between the time combat damage is assigned and the time it's dealt. This is a change from previous rules.
It's funny that the the "this is a change from previous rules" is still in there, from way back when they removed combat damage going on the stack.

You make me feel old. I still remember this whole "stack" thing being the hipster thing to do.

I miss damage on the stack, in spite of its difficulty to understand as an object somehow leaves play before damage is dealt, yet still had enough of an effect on battle to deal its damage. Mogg Fanatic being sacrificed with damage on the stack is something like James Kirk punching a Gorn in the face mid-transport, or something.
