I play show and tell, then i show Omniscience.
He shows meddling mage. As the mage comes into play, can i use cunning wish, even if he proceeds to name cunning wish?

You can't cast spells until mage and omni are in play. He will name before you can cast anything.

As on a card means there is no trigger. That's why you still name even if something like Humility is in play.
Specifically, "as" indicates a replacement effect that replaces how the card enters the battlefield. Entering the battlefield becomes following the instructions of the replacement effect, then entering the battlefield.
