I'm playing a combo deck (Painter, no need to go into the details), should I sideboard more Grafdigger's Cage or more Ensnaring Bridge ?

Bridge is good against Reanimator & S&T. Unless you are worried about Dredge, I'd lean towards Bridge.

Cage also shuts off your ability Weld Painter's Servant back into play.

In defense of Cage, it is a stronger card against Reanimator.

Ensnaring Bridge stops opponents from attacking, completely shuts down decks like BReanimator and Dark Depths, and does nothing to impact your gameplan.

Grafdigger's Cage is great in Delver.

Unless they reanimate a Tidespout (including Grislebrand into Tidespout). That's why Cage is better vs Reanimator.
