I'm playing Garden, my opponent lays a Blood Moon. It's no big deal, since I ditched Riftstone Portal to my first Mox Diamond.
...right? I'm under the impression that Riftstone Portal isn't a mountain when it's in my yard (contrary to what my opponent advises me), and that my lands can tap for 3 colors.
Can somebody give me a hand here?

When its in your graveyard Riftstone Portal is not a non-basic land, its a non-basic land card, so it is not turned into a Mountain by the Moon, and should turn all your non-basics into Rith's Groves.

You are correct that rifstone portal is not a mountain when it is your graveyard. But I do believe your lands woul not be able to tap for green or white in the situation you described because you put it into the graveyard before he played his moon. It comes down to timestamps. So if you discarded the portal after he played the moon they could tap for three colors, but if he played the moon after you discarded the portal, they can just tap for red.
I'm not 100% sure but I think that's how it works out.

Timestamps have nothing to do with it. Your nonbasics are Mountains with "Tap: Add a :r:,:g:, or :w: to your mana pool." Riftstone Portal and Blood Moon do not interact with each other.

Timestamps have nothing to do with it. Your nonbasics are Mountains with "Tap: Add a :r:,:g:, or :w: to your mana pool." Riftstone Portal and Blood Moon do not interact with each other.
Rifstone portal gives lands abilities. Blood moon overwrites land abilities. So I do believe which ever one has the later timestamp would take precedance.

Blood Moon applies in Layer 4. Riftstone Portal applies in Layer 5.
418.5a The values of an object’s characteristics are determined by starting with the actual object, then applying continuous effects in a series of layers in the following order: (1) copy effects (see rule 503, “Copying Objects”); (2) control-changing effects; (3) text-changing effects; (4) type-, subtype-, and supertype-changing effects; (5) all other continuous effects, except those that change power and/or toughness; and (6) power- and/or toughness-changing effects.

More clarification:
212.6e If an effect changes a land’s type to one or more of the basic land types, the land no longer has its old land type. It loses all abilities generated from its rules text and its old land types, and it gains the appropriate mana ability for each new basic land type. Note that this doesn’t remove any abilities that were granted to the land by other effects. Changing a land’s subtype doesn’t add or remove any types (such as creature) or supertypes (such as basic, legendary, and snow) the land may have. If a land gains one or more land types in addition to its own, it keeps its land types and rules text, and it gains the new land types and mana abilities.
This is different than with Urborg, Tomb of Yawgmoth, for example, since Urborg is in play, and is directly effected by Blood Moon.

You apply them in order by number, and timestamp within number (with CDAs first).
