Scenario: What happens if I have a 5/5 with double-strike and my opponent blocks it with a 1/1. Will it deal first strike dmg to the creature (which will die) and then move on to my opponent dealing 5 regular combat dmg to him aswell?

None of the damage will be dealt to the opponent unless it has trample. Even though the creature's gone, the attacker was still blocked.
A similar scenario is when a blocker is taken from combat by removal. If you Swords a blocking Tarmogoyf, your damage still won't get though, unless trample is involved.

I figured Double-Strike would be a bit broken if it functioned like in my scenario. Anyways, was looking for a confirmation and you sure gave me one ;)
