bringer of blue dawn allows you to draw 2 cards at the beginning of your upkeep, and shapesharer allows a target shapeshifter to copy a creature till eot. After the untap step, can you copy a bringer onto the shapesharer and draw 4 cards, or is it after the beginning of upkeep?

No, it won't be Bringer at the beginning of your upkeep, so the trigger won't go on the stack.

Yes, you can do that. But since neither the Bringer nor the Shapesharer have an EoT trigger I fail to see why you mention this (note: "until end of turn" is NOT the same as "At end of turn").
