Oracle wording: Target opponent reveals his or her hand. You draw a card for each Mountain and red card in it.

So with a Servant in play on red... say my opponent has a hand of 3 Mountains, how many cards do I draw? Three or six?

Three, it's the same effect, not two seperate ones. Being red or a mountain qualifies if for the draw, but both is redundant.
