A second maze of ith?

If i try to use maze of ith to stop emrakul and he stifles it, can I use my knight of the reliquary to fetch another maze of ith and still prevent the damage? If so, do I still have to sacrifice all of my permanents?

Yes and yes (not all but 6).

Also if it isn't clear, you still have to sac 6 permanents even if the first Maze activation isn't Stifled.
