I think that sideboarding Therapy is great usually, but might be too slow in the current meta.
The original Scape lists ran 7-8 basics with 4 Vet, 2 STE, 2 Wood Elves. Nissa has since replaced one Wood Elves, but in general the reason it was set up this way was not because ramp, but rather because colors. Since you only have room for a couple fetchlands, the deck had issues actually hitting all of its colors, and the ramp creatures helped out with that (the fact that they accelerated your scapeshift was a secondary purpose).
If you didn't have any issues with your manabase aside from Port (which any 3-color deck will), then good for you. I just wanted to add a little historical context since you stated you weren't happy with Sakura-Tribe in the list. There IS a reason he's there...but if you're comfortable dropping to that few basics, then you should feel free to cut him.
I used to keep a Crop Rotation or two available for Bogging someone or getting tower for Explorer.
Rotation replaces its mana allowing you to super-accelerate more often without running multiple towers:
T1 Land, Explorer
T2 Land, Rotate, Tower->Sac for 2, Explorer for 2 -> 5 mana available (better than the cabal therapy line.)
You could also equate the Cabal Therapy line by holding explorer back to avoid Plow; but it depends whether you fear Plow or Daze more..
Since the deck is all about ramping and card advantage, I didn't hate Crop Rotation; it's just a bit if you face too many blue-control decks (who can counter it and have a reasonable MU to begin with.)
Hi Fit Folks, could someone direct me or post here a general strategy guideline for Nic Fit against common meta decks? I'm relatively new to the deck and have been running Junk Rhino Fit, and seems to have still a difficult time against Miracles/Mentor if I can't quickly strip they're hand. Veteran's death seems to help them out a lot too, what line of play is better against them? Show and Tell is also difficult if I can't strip their hand. Is that the only line to rely on? Against Storm I usually win if I can get a Gaddock in play.

Others may go more in depth, but I'll contribute a few quick hits.
-) Don't off Veterans against Miracles unless you absolutely need the mana to make your hand work. They're one of very few decks which runs as many basics as we do and which use said mana as well or better than us. You usually board out 4 Vet 4 Therapy vs them.
-) As with many matchups, this one revolves around resolving Deed. Sequence your plays such that you end up with a Deed in play. Nic Fit plays a ton of "must-counter" spells...that, coupled with Therapy, is how we push through blue decks. Take advantage of that and play accordingly. If you know you have a window when they tapped out for something and you have info on their hand, slam it -- otherwise, choke out their hand and drop Deed when they're out of protection.
-) Sideboarding Slaughter Games helps out tremendously with all three of these matchups. It doesn't take much -- just put in a Taiga and two Deathrites, and you'll be fine. Slaughter Games is the single best defense against Show and Tell that exists in the format. It loses to exactly Leyline of Sanctity: nothing else stops it, and the effect it has upon combo decks, especially Show and Tell based ones, is devastating.
Well, vs. blue decks that aren't Storm or Miracles either resolve Siege Rhino if they don't run white and if they do resolve Sigarda.
Vs. Storm: Carpet of Flowers and pray to whatever deity you wish that you make it. Even having Gaddock Teeg doesn't mean you're safe.
Vs. Miracles: Carpet of Flowers again. Also, Abrupt Decay becomes a house. Just don't over extend into a Terminus. Deed is a valuable card here as it keeps you from getting killed. Don't worry too much about your creatures, everything dies to Terminus anyway. If you have it, Thragtusk can be pretty good here.
Vs. Elves: Discard, Deed & PtE are your best friends here. Veteran Explorer isn't much of a problem as they run 2 basics max. Just don't ever blow one when they have a full hand (unless they attack into it and you can drop a Deed on your turn). Disrupt, stabilize, kill. If you make it past turn 3 you probably have a shot at winning. Gaddock Teeg also does a lot of work here.
Vs. non-blue decks that run white: Resolve Sigarda.
Vs. non-blue decks that don't run white: Have fun with it. If you have Meren in your 60 odds are you can deal with whatever they're trying to do. Looping PtE (or Deed) is a powerful thing to do. Lands still is a toughy though.
Oh, and vs. graveyard decks. Well... You know... DRS & Scavenging Ooze and postboard Rest in Peace.
Against Miracles, they can't beat a Deed in play. You basically lose if they Counter-lock you and then resolve Jace. Needle on Jace really helps, since they have so few answers to artifacts/enchantments/walkers. Token walkers are your best bet (Elspeth, Garruk), but Sigarda and Thrun do good work as well. Slaughter Games on Jace (depending on your position) is generally game over. Jund has the advantage over white, here.
I don't have much to add except Carpet is good against Miracles, but cards like Tsunami, Choke, and Games are better. Carpet is fine. Those others are great.
Become one with the Rhino, and all shall be well. Looping Rhinos and Meren using Tower is pretty much the illest. That is all.

Yesterday i was playing against Grixis Delver. This MU is indeed a weird one. Those bug's really can crawl under your skin. Games where close, was able to pressure my opponents hand to 0 and wipe his board. Had 2 Rhino's out and still he won thru double bolt on the crucial turn. Conclusion here is lifegain. Altough we have some, we lack some to. I cut the 6 drop and added 2 Liliana going to 61 MD. But was not feeling right either...

For reference, I have trips foil Belagerungsnashorns, because there's nothing quite like trolling legacy tryhards with german foil standard cards.
Miracles can answer a resolved Deed if they run Council's Judgment -- this requires them to actually run the card (not many do these days), draw their singleton copy, and then not have used it on something else problematic (Sigarda comes to mind, since it's their only permanent answer to her). tl;dr: it's very hard and very unlikely for them to beat a resolved Deed.
That's beyond epic.
At the invitational in december some guy on Esper Deathblade asked me if I even ran any legacy cards at all (he saw me wreck BUG Delver with my Siege Rhinos and Meren). I looked him straight in the eye and replied "I play fetchlands. Fetchlands are legacy cards, right?". I then got the pleasure of staring at the blank space where the guys face used to be as he looked at me with incomprehension and disbelief.
Unfortunately I didn't get to face the guy before getting my ass handed to me by Infect.
I played the third rhino, naturally, against a grixis delver player in a daily a few weeks back and he said "I play legacy to escape that stupid card. Why are you doing this?"
Kitchen finks might be a thing to consider for lifegain and resilience.
