Concerning your sideboarding:
VS. ANT with your list I would go like: -3 Symbiote, -3 Visionary, -1 V-Shaman, -1 Glimpse, -1 Hoof. Best friends are too slow in this MU, and having Glimpse + 1 creature equals the effect of EV with the possibility of going into combo mode, which is important because you want to win as fast as possible.
VS D&T I always bring in Needle as well, since they have so many good targets (Vial,Jitte,Mom etc.) and it takes some pressure off your Decays.
VS S&T I like siding out 3 GSZ since here all the 1ofs come out anyways and that way your not so susceptible to Grafdigger´s Cage which most S&T list will bring in against you. Also I would only cut 1-2 Glimpses here, since they again allow for winning quickly and are also a nice Counterbait. That said, with your list I would board like -3 GSZ, -1 V-Shaman, -1 Hoof, -2 EV, -2 Wirewood, -1 Glimpse, +5 Discard, +2 Needle, +3 Thorn. Although I feel Thorns are not that good in the Sneak Show MU, but at least they can buy you a turn or so and there isn´t really anything else you want to bring in looking at your SB. But if you choose to board them, board all of them to increase the consistency of having one in your opening hand. (Since you want to have one down on turn 2, otherwise they won´t do anything for you.)

The line of thinking that led to the build was more or less: Format has problems answering Tombstalker. Format has problems answering Progenitus. Sigarda is a Tomb-progenitus, blocks Delvers/Show and Derp targets, and, interestingly, is twiddlable. Gives GSZ another bomb to dominate fair matchups. Also hoses Annihilator.
Also, DRS is a thing. Savannah+DRS in play isn't that unthinkable. I also suspect that the second Hoof is wrong.

I'm wondering who of you is changing is sideboard considering Patriot is a tier1 getting more and more popularity.

How are u handling the rising of this Tier1?
Decay is significantly better than any of the cards you suggested. The can't be countered part of Decay makes it excellent against all of their soft counters, and all of the cards you suggested can get countered by them and none of them deal with Jitte.
I agree that the turn 1 Delver is there main threat we worry about and some Elf pilots play Meekstone to combat them. TNN isn't that much of a big deal by itself.

It's not that Progenitus isn't better, it's that it's just way too slow in unfair matches, while double Hoof is really good in both, and Ruric often has utility against fair decks and is realistically hardcastable/GSZ-able in grindier games. Progenitus should absolutely be somewhere in your 75, he's amazing. If people don't play much combo where you play, maindeck Progenitus can very well be a good choice.
For what I'd play, more or less, check the Sigarda type build.

Two Hoofs not right only applies to the Sigarda build because it has secondary Absolute Boss class NO targets for both fair and unfair matchups, and even then I'm not 100% sure about it.
You're not packing Ruric AND Sigarda main, 2 Hoofs is 100% where I want to be. 2 Hoofs are made of win and awesome.
